Happy 4th of July!

Are you seeing a bunch of extravagant desserts on your timeline this fourth of July? As you sit on the couch in your pajamas with your computer on your lap and a drink in one hand wishing you had time to make that? But who wants to mess with three layers of cake, frosting, and fondant on a day you have off work?! If you're just as lazy as me this holiday, why not try your hands at a Strawberry Poke Cake this 4th of July? It's easy, cheap, and super delicious! Plus it gives off a beautiful "I spent hours in my kitchen" look without the hours spent ;D



All you need is:
1 box of white vanilla cake mix (plus box ingreidents)
1 box of Strawberry Jello
1 tub of Cool Whip
and some Bluberries

1.) Make the box of cake mix according to package, and choose what size pan you'd like to make your cake in.( I chose an 8x8 disposable pan, because I was too lazy to want to do dishes later ;P) and bake accordingly.

2.) Once the cake is done, let it cool for about 20-30 minutes, about 5 minutes before the cooling time is up, start making your jello according to it's package. Once the sugar has dissolved all the way, pour some jello liquid into a 1-cup measuring cup.

3.) After your cake has cooled, poke holes into the top of your cake, about 1/2 an inch to about an inch apart from each other, and then slowly pour the jello liquid right on top of the cake. I like to use 1 cup at a time with the jello just so I can eye the cake and make sure its not drowning in the liquid, but that the cake has absorbed the jello just right. It took me almost three cups of jello to make it look like this. Then refrigerate the cake for about 2 hours

4.) Once the jello has set in your cake, you can frost it using Cool Whip and decorate with blueberries (and strawberries if you have time for all that.), then you're ready to eat! Enjoy!


Side notes: You'll probably have left over Jello from this recipe, just add a little vodka to it, chill for two hours in a small baking sheet or loaf pan, cut them out with star-shaped cookie cutters, and Voila! You have yourself some 4th of July jello shots. You're welcome. 

Or if you're not over 21 chill the jello in a pan for two hours, Once ready, scoop it out into a parfait glass and top with whipped cream for a fancy-looking snack!
